Iyengar Bakery Openface Sandwich

When I lived in Bangalore, Iyengar bakery visits were almost an everyday event. I still think of the many treats we ate so often and many of which we took for granted.

This morning when I was thinking of breakfast, I wanted something savory and thought of making this easy sandwich based on my memory of it. My kids liked it too.

What you’ll need:

  • Medium Onion Finely Chopped – 1
  • Large Carrot Shredded – 1
  • Tomato Paste – 1 tbsp (I didn’t have fresh tomatoes on hand. If you do, you can use 1 finely chopped)
  • Cilantro Finely Chopped – few sprigs
  • Oil – 2tbsp
  • Mustard – 1 tsp
  • Chili Powder to taste
  • Salt to taste
  • Bread Slices – 6 to 7
  • Butter

Method:

1. In a pan, warm up Oil and add Mustard. Let it splutter. Add Onion and saute till translucent.

2. Add Carrots and saute for 2 minutes. Add Tomato paste, Chili powder and Salt and mix.

3. Switch off heat. Add Cilantro and mix.

4. In the meantime, toast the Bread slices to crisp with Butter on both sides.

5. Spread the vegetable sandwich topping on the bread slices. Serve as open sandwiches. Great with hot chai or coffee.
