Kichidi with Loads of Veggies

This is a slight variation of Moong-Masoor-Quinoa Mixed-Veg Masala Kichidi.

I made it with rice instead of Quinoa. And loads of veggies – Onion, Bell Pepper, Zucchini, Squash, Spinach, Carrots, Ginger and Garlic. All chopped in my food processor. No Tomatoes, but added Fenugreek Seeds. Pressure cooked.

Topped with butter. Comfort food for the cold weather!!
