Oven Roasted Vegetables!

This is such a time saver for me! And they are healthy and kids love them. I use all kinds of vegetables – Cauliflower, Broccoli, Beets, Fennel, Onion, Zucchini, Butternut Squash and all kinds of Squashes, Potatoes,.. the list is whatever I have on hand! And add whatever seasoning that I am in a mood for.

This time it was Baby Potatoes, Zucchini, Yellow Squash and Carrots. Clean and cut them.

I tossed them in Olive Oil, Cumin Powder, Paprika and Salt.

Lay them over an oven safe tray and bake on 425 for about 30 minutes. (I left them for a few extra mins – about 35 mins. But they could have been taken out sooner).
