Vegetable & Tofu Thai Red Curry

We love Thai food in our house! This is a great way to incorporate a whole bunch of vegetables into the food.

What you’ll need:

  • Cut Vegetables – I’ve used Potatoes, Butter Nut Squash, Green Peas, Green Beans, Broccoli Florets.
  • Coconut Milk – 1/2 can
  • Red Curry Paste – 2 to 3 tbsp
  • Firm Tofu cubed – 1 box
  • Cilantro chopped – a few sprigs

Method:

1. Add all the Vegetables and the Coconut Milk in a large pot.

2. Add about 1 to 1 1/2 cups water. Cook on medium low until the vegetables are just cooked but not mushy.

3. Add the Red Curry Paste. Mix and cook for a couple of minutes.

4. Add the Tofu pieces and mix.

5. Top it off wit chopped Cilantro. Enjoy with Steamed Rice!
