A nutritious meal in a Roti

I kept adding the ingredients listed below one by one into my food processor. My husband came and asked me what I am making, and I replied I didnt know. I really didnt know what it would end up as! I initially thought of making cutlets, then as it went along, decided to make rotis. It turned out great!

What you’ll need:

  • Fresh Organic Spinach – 10 to 12 oz (3/4 costco containter)
  • Black Beans – 1 can (15 oz)
  • Paneer –  14 oz or 1 slab
  • Chia Seeds – 1/2 cup
  • Peanuts – 1/2 cup
  • Gram Flour – 1 cup
  • Atta or Chapati Flour – 2 1/2 cups (as needed)
  • Fresh Chili – 1
  • Cumin Powder – 2 tbsp
  • Turmeric – 1 tsp
  • Ajwain – 2 tbsp
  • Kitchen King Masala – 1 tbsp
  • Salt to taste

Method:

1. In a food processor, add all the ingredients to make a dough. Start with Spinach, Paneer, and then the remaining ingredients except Atta.

2. Finally add Atta and mix to make a soft dough. Add more or less atta as needed.

3. Roll the rotis and cook on both sides – no oil required.

4. Enjoy hot with butter and a side of yogurt, pickles, and salad (I had some fresh tomatoes and green chilies grown in my yard and lemon from the neighbors). Or serve with any of your favorites!

TIP: You could half the ingredients if you choose. I did end up with a lot of dough and had to do the final mixing of atta (chapati flour) in a separate bowl as my food processor got full.
