Apricot Jam

I am not crazy about apricots. But when our friend gave us a bag of sun ripe fresh picked apricots from their yard, I wanted to try making this jam!

Recipe is super simple. It tasted yummy – sweet and tangy! And oh I love the beautiful caramel orange color of this jam!

Apricot Jam 2

What you’ll need:

Ripe apricots pitted and cut into quarters – 6 cups

Sugar – 3 cups

Juice and zest of 1 Lemon

Method:

Mix all of the above in a large pot and bring to boil. Can be covered and let simmer for about 30 to 40 minutes.

Store in clean dry jars and refrigerate after it has cooled.
