Bell Peppers, Carrots & Tomato Pasta Sauce

This is a simple homemade pasta sauce that hides a lot of veggies! Very kid friendly.

What you’ll need:

  • Bell Peppers chopped – Red, Yellow, Orange – 1 of each
  • Baby Carrots – about 15
  • Tomatoes (from my yard) chopped – 4
  • Garlic pods – 4
  • Italian Herbs
  • Paprika – 2 tsp or to taste
  • Cumin Powder – 4 tsp
  • Salt to taste

Method:

1. In a large pan, warm some olive oil and add the chopped peppers and garlic. Saute for about 5-7 mins.

2. Add the carrots and tomatoes, cover with lid and continue to cook for another 7-10 mins or until the veggies are cooked.

3. Add the herbs, paprika, cumin powder and salt. Mix and switch off heat. Keep pan covered and allow to cool for about 10 minutes.

4. Blend the veggies to a sauce. As it will still be hot, be careful and cover the top of blender with a cloth to prevent splashing.

5. Mix the vegetable pasta sauce with any of your favorite pasta cooked per package directions. Enjoy!
