Bhindi Fry
Bendekai or Bhindi or Okra or Ladies Finger is my favorite vegetable! And this dish is quite easy to make, but needs some care and patience.
Wash and wipe the orka/bhindi and let air dry for a few minutes to let the moisture dry out, moisture will make the okra slimy. Slit the orka length wise (into rings works very well too). Chop red onion finely. Slit a couple of green chilies lengthwise (optionally use red chili powder).
In a pan, warm up about 2tbsp oil and add the following for tadka or seasoning – 1 tsp mustard, 1 tsp jeera and 2 tsps of urad dal. Let the mustard seeds splutter and the urad dal turn golden. Add the chopped red onion and saute until it starts to turn translucent. Add green chilies or chili powder. Add the slit okra. Saute until it is cooked and starts to get crispy. Add salt to taste.
