Bisi Bele Quinoa with Cucumber Mint Raita

Talk about comfort food! I have eaten many versions of Bisi Bele Bhaat all through my life. And this version is with Quinoa.

What you’ll need:

  • Toor Dal – 2 cups
  • Quinoa – 2 cups
  • Carrots Sliced – 4
  • Potatoes Diced – 3 medium
  • Onion Diced – 1 large
  • Red Bell Pepper Diced – 1
  • Yellow Bell Pepper Diced – 1
  • Cauliflower Florets – 1
  • Tomatoes Diced – 2
  • Turmeric – 2 tsp
  • Curry Leaves – 2 sprigs
  • Bisi Bele Bhaat Powder or Paste – 4 to 5 tsp or to taste
  • Salt to taste
  • Ghee or Butter for tempering – 2 tbsp
  • Mustard – 1 tsp

Note: Any other vegetables such as green beans, peas, green bell peppers, etc could also be used.

Method:

1. Boil Toor Dal and Quinoa with Turmeric and Salt and about 5 to 6 cups of water.

2. When they are over half way cooked, add the vegetables and some more water if needed and cook till done.

3. Add Bisi Bele Bhaat powder or paste. Cook another couple of minutes.

4. In a small pan warm up ghee or butter, add mustard and let it splutter. Add curry leaves. Switch off. Add this tempering to the Bisi Bele Quinoa. Enjoy!
