Black Eyed Beans Dal

What you’ll need:
- Black Eyed Beans – 4 cups
- Red Onion finely chopped – 1
- Avocado oil or any other – 2 tbsp
- Mustard Seeds – 1 tsp
- Cumin Seeds – 1 tsp
- Hing/Asafoetida – 1/2 tsp
- Ginger – 1 inch
- Garlic – 2 pods
- Shredded Coconut – 1 tbsp
- Chilies – 1 to 2
- Turmeric Powder – 1 tsp
- Cumin Powder – 2 tsp
- Sambar Powder – 1 tsp
- Salt to taste
- Fresh Cilantro a few sprigs
Method:
1. Wash and soak the black eyed beans overnight. Cook the soaked beans.
2. In a large pan, warm the oil and add mustard seeds, cumin seeds and hing. When they start to splutter, add the onion and saute until translucent.
3. Add the cooked beans.
4. Grind the following to a fine paste – Ginger, Garlic, Coconut, Chilies, Turmeric, Cumin Powder, Sambar Powder, Salt and 2 tbsp of the cooked beans.
5. Add the ground masala to the dal. Mix and simmer for about 10 minutes on low.
6. Add chopped fresh cilantro. Enjoy with hot rice or roti!
