Carrots with Vegetarian Chorizo

It was towards the end of the week when I was too tired to cook and only had carrots and an orange bell pepper. Then I noticed this chorizo sitting in the fridge as well. And this dish happened.

What you’ll need:

  • Carrots Grated – 4 medium
  • Orange Bell Pepper Chopped – 1
  • Vegetarian Chorizo – 1 (from Trader Joe’s)
  • Olive Oil to saute
  • Urad Dal – 1 tbsp

Method:

1. Warm up the oil and add the Urad dal. Let it turn a nice golden brown.

2. Add the grated carrots and the chopped bell pepper and saute for about 5 minutes.

3. Add the Chorizo and saute for another 5 minutes. Enjoy!

Chorizo already has spices, so no need to add any extra spices or salt.

Could add onion and maybe other veggies too. And fresh cilantro to garnish.
