Chocolate Banana Breakfast Muffins

Every weekend morning as my kids wake up, they are thinking about breakfast and what they want to eat! They were excited when I suggested this and one of my little one sat in front of the oven looking at the timer until it was done 🙂

What you’ll need:

Dry Ingredients –

  • Whole Wheat Flour – 1 cup
  • Oats Flour (made using quaker oats) – 1 cup
  • Chia Seeds – 1/4 cup
  • Hot Cocoa Mix (you can use chocolate chips) – 5 tbsp
  • Sugar – No additional added. Hot cocoa mix had sugar already.
  • Salt – 1/2 tsp
  • Baking powder – 1 tbsp

Wet Ingredients –

  • Ripe Banana (mashed) – 2 medium sized
  • Almond Milk – 1 cup
  • Egg (beaten) – 1
  • Melted Butter (can use avocado or other oil) – 3 to 4 tbsp

Method:

1. Mix all the dry ingredients together and keep aside.

2. Mix all the wet ingredients together and keep aside.

3. Fold the dry and wet ingredients together.

4. Pour into muffin pan lined with cup cake liners.

5. Bake in 375 deg oven for about 22 mins or till done.
