Earth Day Cake – Banana Cake with Whipped Cream Frosting

Happy Earth Day!!

On Earth day, my kids wanted me to make cup cakes which would look like Earth. It was in the middle of the week, so I convince them that I’d make it over the weekend. As soon as Friday arrived, they started reminding me of it! Finally I made this (instead of cup cakes) yesterday.

My 5 year olds were a huge help – from getting all the ingredients to me, to mashing, to mixing, to ideas for frosting and tasting! And especially all the excitement 🙂

For cake:

what you’ll need:

  • Ripe Banana – 3
  • Juice of 1/2 Lemon
  • All Purpose Whole Wheat flour – 2 cups
  • Oats Flour – 1 cup
  • Baking Soda – 1 1/2 tsp
  • Butter Melted – 1 stick
  • Salt – 1/4 tsp
  • Sugar – 1 cup
  • Eggs – 3 large
  • Vanilla – 2 tsp
  • Buttermilk – 1 1/2 cups

Note: I only had salted butter, so I didn’t add additional salt.

Method:

1. Mash the banana. Mix in the lemon juice.

2. In a large mixing bowl, mix the melted butter with sugar until fluffy (I used a hand mixer). Add the eggs one at a time and continue to mix.

3. Next add the flour in one cup at a time and mix. Add the baking soda and vanilla and mix. Also add the buttermilk and mix.

4. Grease and flour a cake pan. Pour the cake batter into it.

5. Preheat the oven to 275 deg. Bake the cake for 1hr to 1 hr 15 mins (took me that long). A toothpick inserted in the middle should come out clean.

For Whipped Cream Frosting:

Beat heavy whipping cream, sugar and vanilla using a hand mixer until it thickens to spreadable consistency.

Add food colors as desired.
