Homemade Cantaloupe Ice Cream (Without Ice Cream Maker)
This is an ice cream I don’t mind giving my kids and whats more, its easy to make!
What you’ll need:
- Ripe Cantaloupe – 1
- Sugar – 1 cup
- Freshly squeezed juice of 1 lemon
- Milk – 1 cup
Method:
1. Peel, seed and cut the cantaloupe.
2. Put fruit in a food processor along with sugar and lemon juice. Run the processor.
3. Heat milk (I used whole milk which the kids drink regularly), just until it bubbles on the sides. Add to the food processor while running it.
4. Once blended, pour into a freezer safe box. (Note: Use a big enough box, so that mixture does not fill more than about half).
At this point, if you have an ice cream maker, it could be used. Otherwise, move on to step 5.
5. Every 2-3 hours, take the ice cream out of the freezer and run a hand mixer through it. Put back in the freezer. Do it 3 times.
6. Once the ice cream sets after the third time, its ready to eat up. Enjoy!
Cantaloupe is not my favorite fruit, so when hubby brought home 3 of them, I was sure they would just sit there and go bad. I am so glad I made this, we are loving it! It is very light and refreshing. I will be trying this with other fruits as well.
Oh, 4 year olds are great help in making this!!
