Mexico Meets Italy! Guacamole Pesto Pasta

If you love Guacamole (who doesn’t!) and you love a good Pasta (again, who doesn’t right?!), you’ll absolutely love this super easy, super delicious dish!

What you’ll need:

  • Avocados – 2 ripe
  • Cilantro – Small bunch
  • Fresh Chilies – 3 or to taste
  • Juice of half Lime
  • Walnuts – a big handful
  • Salt to taste
  • Cherry Tomatoes sliced in half – 1 tub or  2cups
  • Chilli flavored Penne Pasta (or any pasta of your choice) – 1 bag (500g)

Method:

1. Cook the pasta according to package instructions.

2. In a food processor, run the avocado pulp, cilantro, chilies, walnuts, lime juice and salt to form a chunky pesto (dont make it too smooth).

3. Mix the hot cooked pasta, avocado pesto and the sliced cherry tomatoes. Enjoy!

I LOVED the heat from the chili pasta combined with the flavors of the guacamole pesto!!
