Mixed Vegetable Rice with Broccoli Sesame Peanut Chutney

What you’ll need:

  • Olive Oil – 1 to 2 tbsp
  • Red Onion thinly sliced – 1/2 cup
  • Broccoli chopped finely – 1/2 cup
  • Carrots chopped into small cubes – 1/2 cup
  • Green peas – 1/2 cup
  • Cooked Rice – about 2 cups
  • Salt to taste (remember chutney already has salt)
  • Broccoli Sesame Chutney (See Recipe) – 1/2 to 3/4 cup

Method:

1. Warm up the olive oil in a large pan. Add the onion and saute until it turns translucent.

2. Add the remaining vegetables and cover the pan with lid till they are cooked.

3. Add the Broccoli Sesame Peanut Chutney

4. Add the cooked Rice and mix everything together. Its ready to eat!

I served it with Banana slices and Yogurt on the side for kids.
