Quinoa Upma

Last night I felt like a simple upma for dinner. You know, sooji upma just with onion and lots of cilantro! But I didnt have sooji, so decided to use quinoa. And the health nut in me thought I’ll add some veggies – so put in potatoes & green peas. Then I saw the 1/2 can of black beans and some of the tomato paste sitting in the fridge leftover from last week.. added them. And then I thought I’ll add palyada pudi (vangibath powder) which is sometimes used in upma. And this is what I ended up with.. Kids were  happy to eat it with yogurt and some cranberries.

What you’ll need:

  • Cooked Quinoa – 2 cups
  • Potato (cut into small cubes) – 2 to 3
  • Green Peas – 1 cup
  • Black Beans – 1/2 can
  • Tomato Paste (you can use fresh tomatoes) – 2 to 3 tbsp
  • Cilantro (chopped) – a few sprigs
  • Oil – 2 tbsp
  • Mustard Seeds – 1tsp
  • Vangibhat Powder – 2 to 3 tsp
  • Salt to taste
  • Lemon juice to taste.

Method:

1. In a large pan, under medium heat, add oil. Add Mustard Seeds. Let it Splutter.

2. Add the chopped potatoes and saute till cooked.

3. Add green peas, black beans,tomato paste, vangibhat powder, salt and cilantro. Mix.

4. After 5 mins add the cooked quinoa. Mix. Switch off after another 5 mins.

5. Add lemon juice and give it a stir. Enjoy!
