Sesame Teriyaki Vegetable Stir Fry with Quinoa and Boiled Egg

What you’ll need:
- Carrots Sliced – 2
- Red Bell Pepper cut into thin strips – 1
- Yellow Bell Pepper cut into thin strips – 1
- Broccoflower florets – 2 small
- Sweet Peas – 1 cup
- Green Onion chopped – 1 bunch
- Sesame Teriyaki Sauce – 1 cup
- Avocado Oil – 2tbsp
- Boiled Eggs – 4
- Cooked Quinoa
Found these lovely Broccoflowers at the local Farmers Market. You can always replace it with Broccoli and Cauliflower.
Making Lemon Cilantro Quinoa on stovetop is very easy. Add 2 cups water to 1 cup quinoa, a teaspoon of salt and bring to boil. Reduce heat to low and cook covered for about 20 mins (until cooked). Fluff it with a fork. Mix lemon juice and chopped fresh cilantro.
Method:
1. Heat oil in a large pan on high and saute veggies.
2. Add the Sesame Teriyaki Sauce or any of your favorite stir fry sauce. Mix. Switch off heat.
3. Serve hot with Quinia and Boiled Egg. And maybe even some ginger beer! Enjoy!
