Vegetable Kootu

What you’ll need:

  • Moong Dal – 2 cups
  • Turmeric – 1 tsp
  • Salt to taste
  • Veggies

For Masala:

  • Olive (or other) oil – 2 tbsp
  • Channa Dal – 2 tbsp
  • Urad Dal – 1 tbsp
  • Coriander Seeds – 1 tbsp
  • Jeera Seeds – 1tbsp
  • Fenugreek (Methi) Seeds – 1tsp
  • Mustard Seeds – 1 tsp
  • Black Pepper Corn – 1 to 2 tsp (to taste)
  • Dry Red Chilies (optional) – 1 to 2 (to taste)
  • Cinnamon Stick – 1 inch piece
  • Cilantro (coriander leaves) – few sprigs

Note: You can adjust any of these to your taste. I add peppercorn and omit red chilies because the kids find it spicy if I add both. The sweetness of the vegetables used balances out the heat.

Method:

  1. Boil Moong Dal. Add Salt to taste and Turmeric powder.
  2. Chop veggies and cook with the dal when it is half cooked. I used Carrots, Orange Bell Pepper, Tomato, Green Peas. Other veggies that could be used are – cauliflower, potato, green beans, etc.
  3. In the mean time, warm up a couple of tbsps of oil in a small pan and roast all ingredients listed under Masala, except cilantro.
  4. Grind these spices along with a few sprigs of cilantro.
  5. Add to the cooked dal and veggies. Boil for about 5 mins. Enjoy with hot rice and ghee or butter (optional).
