Veggie Ball Mix Rice

After making veggie balls to go with spaghetti, I still had a lot of mix left. So for a quick fix dinner, I decided to mix it up with some leftover rice I had. It would also be good with cooked quinoa, or maybe in muffins or as a stuffing in paratas or sandwich.

What you need:

  • Veggie ball mix – 1 1/2 cups
  • Cooked Rice – 2 cups
  • Olive Oil – 1 tbsp
  • Vangi Bhat Powder – 2 to 3 tsp or to taste
  • Salt to taste

Method:

1. In a large pan, warm the olive oil. Add the veggie ball mix to it. Saute till cooked.

Note: It might be a little sticky due to the oats flour in it, but no lumps will be formed. It becomes crunchy as it cooks.

2. Mix in the vangi bhat powder and salt.

3. Mix in the rice.

I loved the taste of this rice! It had a nutty, minty flavor with the heat from the vangi bhat masala.

It was gone before I could take a picture!
