Mango Jam

As someone who grew up in India with a big alphonso mango tree in the backyard and having spent most of the summer days on it, I really miss the mango seasons of India! My husband and I often argue about who has eaten more mangoes between us 🙂 Our kids love mangoes too. Although we don’t get all those varieties, glad that we get some good mangoes here in the US. We often pick up from Costco and I like this variety.

What you’ll need:

  • Ripe Mangoes – 20
  • Organic Raw Sugar – 5 cups
  • Juice of 1 Lemon

Method:

1. Peel the skin and cut the mangoes into small pieces.

2. Put the cut mango and sugar into a large pan on medium-low heat and cook for about 1 hour, turning occasionally.

3. Add the lemon juice and cook until set – the jam is not runny anymore. Or the freezer test can be done to see if its ready.  After it has cooled, store in clean jars and refrigerate. Enjoy!

NOTE: I like chunky pieces of fruit in the jam. But if you want it smoother, the fruit can be blended a little.
