Carrot Almond Payasa (Kheer)

What you’ll need:

  • Baby Carrots – 4 cups
  • Milk – about 4 cups
  • Almonds – 1/2 cup
  • Sugar – 1/2 cup or to taste
  • Cardamom Powder – 1 tsp

Method:

1. Add the Carrots, Milk and Almonds to a sauce pan and let them simmer on medium low until the carrots are cooked.

2. Add the contents to a blender, add Sugar and grind to a puree. Adjust sugar and add more milk to get the consistency you prefer.

3. Pour back into the sauce pan, add the Cardamom powder. Bring to one final boil. Enjoy warm or chilled!
