Easy Five Veggie Fried Rice

Onion, Carrots, Bell Pepper, Brussel Sprouts, Spinach all hidden into this dish which is very kid friendly! My little one loves fried rice and gobbled this up in no time. Usually, we have to keep telling him to eat at every bite!!
What you’ll need:
- Red Onion finely chopped – 1/2
- Red Bell Pepper fine chopped – 1
- Baby Carrots – 1 cup
- Brussel Sprouts – 10 to 12
- Spinach – 1/2 cup
- Pre-Cooked Rice – 4 cups
- Kung Pao Sauce – 3 tbsp or to taste
- Soy Sauce – 2 tbsp or to taste
- Sweet Chili Sauce – 1tbsp or to taste
Method:
1. In a large wide pan, add some Olive oil and saute the Onion until golden. Add the chopped Red Bell Pepper.
2. In the meantime, chop the Carrots and Brussel Sprouts finely in the food processor. Add to the pot along with Spinach and saute on high for about 2-3 minutes. Stir constantly.
3. Add the Kung Pao Sauce, Soy Sauce and Sweet Chili Sauce. Adjust to taste.
4. Add the Rice and mix well until everything is combined. Switch off heat. Enjoy while it is hot!
My son enjoyed it with a fried egg.
