Red Carrots and Apple Muffins with Raisins and Walnuts

Shred about 15 carrots (I used the quantity shown in pic. They were mixed size)
And 2 apples (pic only shows one. But I added another). Keep aside.
1. In a mixing bowl, mix together the below dry ingredients –
- 3 cups whole wheat flour
- 1 cup sugar – can add more if you want. But there is sweetness from carrots and apples as well.
- 3 tsp baking soda
- 1 1/2 tsp salt
- 2 tsp nutmeg powder (can add/swap with cinnamon too)
Mix and keep aside
2. In another mixing bowl, mix the below wet ingredients –
- 4 eggs beaten
- 3-4 tsp vanilla extract
- 1/4 -2/3 cup avocado oil (can substitute with a vegetable oil)
- To this mix the shredded carrots and apples
- Mix in 1 cup of chopped walnuts
- And 1 cup of raisins
3. Mix the dry ingredients with the wet little by little.
4. Pour into muffin pan lined with cupcake liners almost up to top. Bake for 22 mins or till done in a 350deg oven.
I made a large quantity because I wanted to use up all the carrots. And got 28 muffins. Recipe could be halved if you don’t want that many.
