Peanut Butter Stuffed Banana French Toast
Sunday morning. Kids wanted stuffed french toast for breakfast. As I started making it, I noticed one ripe banana sitting in the basket. So I decided to add it in. My 5 year old said, “umm.. good. I wish you could make this again and again and again. Even gooder than chocolate syrup. Amma I can’t taste the egg”. 🙂 he doesn’t like eggs.
What you’ll need:
- Eggs – 2
- Milk (I used whole, but have made it with fat free too) – 1/2 cup
- Ripe Banana – 1
- Vanilla extract – 1 tsp
- Bread slices – 4
- Peanut Butter – 4 tsps or as needed
- Chocolate Syrup (optional)
- Butter for making the french toast
Method:
1. In a wide bowl add eggs, milk, banana and vanilla extract. Mash the banana and beat the mixture using a fork.
2. Take a slice of bread and spread peanut butter on one half. Fold the bread.
3. Dip in the egg banana mixture on both sides until well soaked.
4. Heat a pan, add a small amount of butter. Toast the soaked bread on both sides until golden.
5. Drizzle with chocolate syrup when serving (optional).
