Vegetarian Sushi Rolls
My son’s favorite food! I was intimidated to try, but after he’d asked me so many time, gave it a try! And it turned out awesome!
To make Sushi, you’ll need to make the Sushi Rice, get all the Stuffing ready and then finally Roll it out!
Sushi Rice
What you’ll need:
- Sushi Rice/Short Grained Rice – 2 cups
- Water – 3 cups
- Rice Vinegar – 5 tbsp
- Sugar – 2 tbsp
- Oil – 1 tbsp
- Salt – 1 tsp
Method:
1. Wash the Rice 2 to 3 times.
2. Cook the Rice in a Rice Cooker or in a sauce pan. In the Sauce pan, add Rice and Water. Bring water to a boil and reduce to low, cover and cook for 20 minutes.
3. Open the lid and let sit for 10 minutes. Transfer to larger bowl.
4. In a small bowl, mix Rice Vinegar, Sugar, Salt and Oil. Microwave and mix to dissolve the sugar and salt. Mix this into the cooked Rice.
5. Let Rice cool.
Stuffing
You can use whatever veggies you like. I used these –
- Cucumber
- Purple Carrots
- Red Bell Pepper
- Jalapeno Pepper
- Avocado
- Marinated Tofu
Assembly
What you’ll need:
- Nori/Seaweed Sheets – about 8
- Cup of water to wet hands
- Cooked Rice
- Stuffing
Method:
1. Cover the Bamboo Sushi rolling mat with plastic wrap.
2. Place a Seaweed Sheet on the mat, shiny side down.
3. Scoop out rice and spread on the sheet evenly, leaving one edge. You’ll need to wet your fingers while spreading as the Rice will stick.
4. Place the Stuffing. Roll tightly starting from one end, all the way around.
5. Cut the roll into about 8 pieces evenly.
Serve with Soy Sauce, Pickled Ginger and Wasabi paste. Enjoy!!
